This simple pan fried cod dish is packed with flavor from zesty lemon, creamy butter and salty capers and topped with our keto Polonaise Dressing.

Ingredients

  • 2 fillet – each 4 ounce raw cod, cooked from fresh
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon, whole pieces capers
  • 2 servings (1.5 tablespoon per serving) keto polonaise dressing
  • ½ tablespoon olive oil
  • ½ tablespoon unsalted butter
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Heat the olive oil in a large non-stick pan. Season the cod fillets and add to the pan, cooking until lightly golden on one side – about 4/5 minutes.
  2. Carefully turn the cod over and add the butter to the pan along with the capers and lemon zest. Continue to cook the cod, spooning the butter over the fish until opaque and completely cooked through.
  3. Top the cod with the Polonaise dressing to serve.
