Getting enough protein into your meals on a Keto Vegan diet can be tricky. That is precisely why this sandwich is perfect for any lunch occasion. Keto bread is toasted and filled with a “feta and spinach” mixture made from tofu instead of cheese. The crispy, toasted bread adds a nice textural contrast! Both the tofu and the Keto bread have a fair amount of protein in them. The sandwich is best eaten immediately after cooking so you can enjoy the bread crispy. Feel free to pair this sandwich with Keto Vegan side recipes with a high amount of healthy fats (since tofu is extremely lean). Be sure to spread plenty of Vegan butter onto the toast to add in fats. The super firm tofu is sauteed in olive oil, and spinach is added for iron.

What kind of tofu to use?

Please use super firm tofu, which is high in protein but very low in overall net carbs.

Be sure to find Keto bread that does not include egg whites! Also, you can add additional vegan butter to the bread during the toasting process to add more fats.

Ingredients

  • 2 Slice keto bread
  • 2 tablespoon vegan butter
  • 1 tablespoon extra virgin olive oil
  • 0.2 package vitasoy usa organic nasoya super firm cubed tofu
  • ¼ teaspoon coarse kosher salt
  • ½ cup spinach

Instructions

  1. Spread two pieces of Keto bread with 2 tablespoons of vegan butter.
  2. Toast the bread in a dry pan over medium heat.
  3. Remove the bread from the pan and add in the olive oil and swirl the pan to coat. Add in the tofu and break it up with a wooden spoon or spatula.
  4. Once broken up, add in the spinach and kosher salt.
  5. Top one bread with the tofu mixture and top with the other piece of toasted bread. Slice the bread in half if desired and serve immediately.
