These simple stir fried peppers are cooked until soft and tender with salty capers and olives, aromatic garlic and a little twist of lemon.
This is a great topping for grilled meats or fish or added to salads.
Ingredients
- 8 medium black olives
- 1 ½ tablespoon olive oil
- 1 clove garlic
- 1 tablespoon, whole pieces capers
- 1 teaspoon lemon peel or zest raw
- 1 medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
- ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
Instructions
- Slice the bell peppers into thin strips. Heat the oil in a skillet over a medium heat and add the pepper strips, cooking for 3-4 minutes to soften.
- Crush the garlic, slice the olives and roughly chop the capers. Add to the pan along with the lemon zest and stir well to combine. Cook for a further 2-3 minutes until the peppers are soft and the garlic is tender.
