This crunchy keto salad is packed with low carb vegetables, toasted pine nuts and peppery arugula.

This is a great side salad for two served with chicken, fish or a vegetarian main.

Ingredients

  • 4 medium – 3/4" to 1" diameter radish, raw
  • 1 cup arugula
  • 1 tablespoon, whole pieces pine nuts
  • 1 tablespoon olive oil
  • ½ each avocado
  • ½ tablespoon lemon juice
  • ⅓ large – 8 1/4" long cucumber
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the pine nuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes until lightly golden.
  2. Finely dice the cucumber and avocado and thinly slice the radishes. Add to a serving bowl with the arugula and toss to combine.
  3. Add the pine nuts to the salad, season to taste and stir to combine.
  4. Whisk together the lemon juice and olive oil and drizzle over the salad to serve.
