This crunchy keto salad is packed with low carb vegetables, toasted pine nuts and peppery arugula.
This is a great side salad for two served with chicken, fish or a vegetarian main.
Ingredients
- 4 medium – 3/4" to 1" diameter radish, raw
- 1 cup arugula
- 1 tablespoon, whole pieces pine nuts
- 1 tablespoon olive oil
- ½ each avocado
- ½ tablespoon lemon juice
- ⅓ large – 8 1/4" long cucumber
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the pine nuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes until lightly golden.
- Finely dice the cucumber and avocado and thinly slice the radishes. Add to a serving bowl with the arugula and toss to combine.
- Add the pine nuts to the salad, season to taste and stir to combine.
- Whisk together the lemon juice and olive oil and drizzle over the salad to serve.
