Avocado boats are the perfect vehicle for your sandwich toppings. These avocado boats are stuffed with creamy ricotta, salty sundried tomatoes, chicken and aromatic basil.

These are a great option to rustle up between meals, perfect for keeping hunger at bay!

Ingredients

  • 1 ounce rotisserie chicken
  • 1 each avocado
  • 1 tablespoon ricotta cheese
  • 2 pieces sundried tomatoes in oil by pastene
  • 3 leaf basil, fresh
  • 2 teaspoon olive oil
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the avocado in half, lengthways and remove the stone.
  2. Roughly chop the tomato and basil leaves and add to a mixing bowl along with the ricotta. Stir well to combine.
  3. Roughly shred the chicken and add to the bowl. Add the olive oil and season with salt and pepper. Mix well to combine.
  4. To serve, divide the chicken mixture between the two avocado halves.
