Avocado boats are the perfect vehicle for your sandwich toppings. These avocado boats are stuffed with creamy ricotta, salty sundried tomatoes, chicken and aromatic basil.
These are a great option to rustle up between meals, perfect for keeping hunger at bay!
Ingredients
- 1 ounce rotisserie chicken
- 1 each avocado
- 1 tablespoon ricotta cheese
- 2 pieces sundried tomatoes in oil by pastene
- 3 leaf basil, fresh
- 2 teaspoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Slice the avocado in half, lengthways and remove the stone.
- Roughly chop the tomato and basil leaves and add to a mixing bowl along with the ricotta. Stir well to combine.
- Roughly shred the chicken and add to the bowl. Add the olive oil and season with salt and pepper. Mix well to combine.
- To serve, divide the chicken mixture between the two avocado halves.
