This simply yet tasty dish infuses cauliflower rice with creamy coconut milk to create an indulgent side dish.

Perfect served with chicken pieces and steamed green vegetables, this coconut rice would serve 4 as a side addition to a main meal, or two to form the base of your main dish. Make sure to adjust your macros accordingly!

Ingredients

  • 3 cup, cut pieces cauliflower rice
  • 1 cup canned coconut milk
  • ½ each – 2" diameter lime
  • 1 large scallions
  • ¼ cup, chopped cilantro
  • 0.2 teaspoon salt
  • 1 tablespoon coconut oil

Instructions

  1. Melt the coconut oil in a large pan over a low/medium heat. Add the cauliflower rice to the pan and season with a little salt. Fry gently for 2-3 minutes, coating in the oil.
  2. Add the coconut milk to the pan and bring the mixture to a simmer. Continue to cook, stirring regularly until all the liquid has been absorbed – about 5-10 minutes.
  3. Add the lime juice and zest and stir through with a fork, separating the rice pieces.
  4. Remove from the heat. Finely dice the scallion and chop the cilantro. Add to the pan, stirring through.
  5. Serve immediately.
