This simple radish mash is rich with butter and heavy cream and seasoned with garlic and fresh parsley.
This is a great side dish to complement roasted chicken or grilled pork chops!
Ingredients
- 17 ½ ounce radish
- 1 ½ tablespoon butter
- 1 ½ tablespoon heavy cream
- 1 clove garlic
- 1 tablespoon parsley, fresh
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Trim the tips of the radishes and slice in half. Add to a pan of boiling water and simmer for 5-6 minutes until tender. Drain well.
- Transfer the radishes to a food processor and blend to a rough mash. Transfer the mash to a sieve and squeeze out as much excess liquid as possible.
- Spoon the radish back into the food processor. Add the butter, cream, parsley, garlic, salt and pepper.
- Blend again until you reach your desired mash consistency and heat through if required.
