In a pinch for lunch? Make these spicy salmon bowls ahead of time, and you can easily meal prep your lunches! The longer your salmon can marinate in the chili-soy sauce, the more flavor will develop! If you’re too sensitive to spicy food, you can remove the sriracha from the spicy mayo drizzle. Otherwise, enjoy this meal hot or cold!

Ingredients

  • 2 cup cauliflower rice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 oz, boneless lox
  • 4 teaspoon ground fresh chili paste by sambal oelek
  • 2 teaspoon soy sauce
  • ¼ teaspoon ginger
  • 4 tablespoon mayonnaise
  • 1 teaspoon sriracha hot sauce
  • 2 teaspoon cilantro, raw, coriander leaves

Instructions

  1. Mix prepared, hot cauliflower rice in a bowl with the salt and pepper. In a separate bowl, combine the lox, chili sauce, soy sauce, and ginger. You can use a spoon to mix the ingredients together and break up the lox, if necessary.
  2. Divide the cauliflower rice between two bowls. Arrange the saucy lox over the rice evenly.
  3. Whisk together the mayo and sriracha, and drizzle the spicy mayo over everything. Top off both bowls with freshly chopped cilantro as garnish, and enjoy!
