Please use fresh baby bok choy. If you cannot find baby bok choy, feel free to use regular bok choy.

Ingredients

  • 12 oz bok choy
  • 1 tablespoon natural rice vinegar
  • 2 teaspoon sesame oil
  • 1 ½ tablespoon tamari sauce
  • 2 tablespoon, chopped almonds
  • 1 medium – 4 1/8" long scallions or spring onions, tops and bulb, raw

Instructions

  1. Trim the ends from the bok choy and cut the bok choy in half. Wash and drain the baby bok choy very well, making sure to drain off as much water as possible.
  2. Thinly slice the bok choy and combine it with the rice vinegar, soy sauce, and sesame seed oil.
  3. Top the salad with sliced almonds and sliced scallions. Serve immediately.
