About
These fluffy clouds are all egg! Each cloud is whipped up with crispy bacon and a sprinkle of cheddar cheese, and they cradle a soft-baked egg yolk. Enjoy alongside some keto toast with avocado or another favorite Carb Manager breakfast recipe!
Ingredients
- 2 slice – 6" long bacon
- 2 large raw egg
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- ⅛ cup, shredded cheddar cheese
Instructions
- Preheat an oven to 325 degrees and line a small baking tray with parchment paper – set this aside. Cook to pieces of bacon over a stovetop to a crisp. Allow the bacon to cool, then chop it into bacon bits.
- While your bacon is cooling, separate your eggs. Set the yolks aside, but keep them intact. Set the egg whites in a stand mixer and whip them to stiff peaks.
- Use a spatula to fold in the salt, pepper, cheddar cheese, and bacon bits into the egg whites, being careful not to completely deflate the eggs.
- Divide the mixture into 2 portions (or more if you are making more servings), and set them on the baking tray. Use your spatula or a spoon to create pockets in the center of each egg cloud.
- Bake the egg clouds for 10 minutes. Then, set the reserved egg yolks in the center of each egg cloud and bake for an additional 10 minutes for over-medium yolks. Garnish with freshly chopped chives and enjoy!
