This warming cabbage dish is hot and sweet with maple flavored syrup and a touch of Dijon mustard, braised until soft and tender.

This is a great side dish for the festive season and the perfect accompaniment to pork or chicken.

Ingredients

  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 cup vegetable broth, bouillon or consomme
  • ½ medium – head – approx 5" diameter red cabbage
  • ½ medium – 2 1/2" diameter red onion
  • ½ tablespoon thyme, fresh

Instructions

  1. Thinly slice the cabbage and the onion. Heat the olive oil in a large saucepan or casserole dish over a low/medium heat. Add the cabbage and onion and cook for 3-4 minutes to soften a little.
  2. Add the thyme leaves, mustard, syrup and vinegar. Stir well to combine until the cabbage is well coated and cook for a minute more.
  3. Add the stock and bring to a gentle boil. Reduce to a simmer and cover the pot, cooking for 15 minutes.
  4. Uncover the pot and continue to simmer for a further 15 minutes, or until all the liquid has evaporated, stirring often.
