This simple keto sandwich is made with fried halloumi slices in place of bread and filled with a simple dressed salad of tomato, arugula and red onion.
This makes for a quick and easy vegetarian lunch option.
Ingredients
- 4 ½ ounce haloumi cheese by papouis
- 2 cherry cherry tomato
- 2 teaspoon olive oil
- 1 teaspoon red onion
- 1 teaspoon lemon juice
- ¼ cup arugula
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Carefully cut the halloumi into two even slices. Add the cheese to a dry skillet over a medium/high heat and fry for 2-3 minutes each side until golden brown. Set aside.
- Whilst the halloumi is cooking, finely dice the tomatoes and add to a small mixing bowl along with the onion and arugula. Toss to combine.
- Add the olive oil, lemon juice, salt and pepper and stir well.
- Spoon the salad onto one slice of the halloumi.
- Top with the remaining halloumi slice to serve.
