This simple keto sandwich is made with fried halloumi slices in place of bread and filled with a simple dressed salad of tomato, arugula and red onion.

This makes for a quick and easy vegetarian lunch option.

Ingredients

  • 4 ½ ounce haloumi cheese by papouis
  • 2 cherry cherry tomato
  • 2 teaspoon olive oil
  • 1 teaspoon red onion
  • 1 teaspoon lemon juice
  • ¼ cup arugula
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Carefully cut the halloumi into two even slices. Add the cheese to a dry skillet over a medium/high heat and fry for 2-3 minutes each side until golden brown. Set aside.
  2. Whilst the halloumi is cooking, finely dice the tomatoes and add to a small mixing bowl along with the onion and arugula. Toss to combine.
  3. Add the olive oil, lemon juice, salt and pepper and stir well.
  4. Spoon the salad onto one slice of the halloumi.
  5. Top with the remaining halloumi slice to serve.
