In under 20 minutes you can have a weekday lunch that is hot and fresh out the oven! This skillet has all your favorite lasagna ingredients minus the starchy noodles. You can expand on this meal by including a small side salad or adding a side dish, such as keto cauliflower mashed potatoes!
Ingredients
- 6 ounce hamburger or ground beef, 85% lean
- ½ tablespoon olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper, ground
- ⅛ teaspoon onion powder
- ½ teaspoon garlic
- ¼ teaspoon italian seasoning
- ¼ teaspoon oregano, dried
- ¼ cup no salt added crushed tomatoes by hunt's
- 1 ounce spinach
- 2 tablespoon ricotta cheese
- ¼ cup, shredded parmesan cheese
Instructions
- Preheat an oven to 350 degrees. Meanwhile, toss together the ground beef with the olive oil in an iron skillet (or oven-safe skillet) over medium heat. Stir in the salt, pepper, onion powder, garlic, italian seasoning, and oregano. Cook the beef until it is cooked through and just beginning to crisp.
- Turn the heat down to low and stir in the crushed tomatoes. Cook the skillet for 1-2 minutes before adding the spinach into the skillet. Stir the ingredients until the spinach gets coated in the oil and wilts halfway.
- Remove the skillet from the heat. Dollop the ricotta cheese over the skillet followed by a layer of parmesan cheese. Place the skillet in the oven and cook for 5 minutes. You may cook longer to give your parmesan cheese a golden crust, at your discretion.
