These tangy green beans are cooked until tender then sautéed in a sweet and spicy maple mustard dressing.

These are a great addition to Sunday lunch, perfect with roasted pork!

Ingredients

  • 5 ounce green beans (string beans), raw
  • 1 ½ tablespoon olive oil
  • 2 teaspoon maple flavored syrup by lakanto
  • 1 clove garlic
  • ¾ teaspoon mustard
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
  2. Whilst the beans are cooking, add the lakanto syrup, mustard, 1 tablespoon of olive oil and a pinch of salt and pepper to a small bowl. Whisk together until smooth.
  3. Heat the remaining oil in a skillet over a low/medium heat. Crush the garlic and add to the pan, sweating gently until tender. Add the green beans and cook for a minute more.
  4. Drizzle over the maple mustard dressing and stir well to combine. Increase the heat and cook for 30-40 seconds more until hot through.
