This cucumber salad is packed with salty anchovies and capers, zesty lemon and sweet red onion.
This makes a great side dish to white fish or grilled chicken.
Ingredients
- 2 anchovies anchovy canned
- 2 teaspoon olive oil
- 1 tablespoon parsley, fresh
- 1 teaspoon capers
- 1 teaspoon lemon peel or zest raw
- 1 teaspoon lemon juice
- ¼ small red onion
- ¼ large – 8 1/4" long cucumber
- ⅛ teaspoon black pepper
Instructions
- Dice the cucumber, thinly slice the onion and roughly chop the parsley. Add to a mixing bowl. Roughly tear in the anchovy fillets and add the capers and lemon zest. Toss to combine.
- Season the salad with black pepper and drizzle over the lemon juice and olive oil. Stir well to combine.
