This delicious bell pepper salad is loaded with flavor and texture from juicy red bell peppers, salty anchovies and olives, creamy avocado and hard boiled eggs.
This is a great lunchtime option or light dinner.
Ingredients
- 4 medium black olives
- 2 cup arugula
- 2 anchovies anchovy canned
- 2 medium boiled eggs
- 1 medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture
- 1 tablespoon olive oil
- ½ each avocado
- ¼ medium – 2 1/2" diameter red onion
Instructions
- Thinly slice the avocado, bell pepper, onion and olives. Add to a bowl with the arugula and roughly tear in the anchovies. Toss to combine.
- Peel and slice the hard boiled eggs and arrange in amongst the salad. Drizzle over the olive oil and toss gently to coat.
