Cookies are delicious, but cookies are even better when they require no baking! I love these cookies and how cute they look with a little crosshatch pattern on top that you can make with simply pressing a fork into them. Cream all the ingredients together and then roll them into balls and simply press them with a fork to flatten. Freeze and you’re done! These cookies are not very sweet, they are just lightly sweetened. Please feel free to add your sugar substitute of choice, yet be sure to count carbs.

Ingredients

  • 6 ounce cream cheese
  • 1 cup unsweetened fine coconut by no name
  • 2 tablespoon coconut flour by nutiva
  • ⅓ cup, chopped walnuts
  • 4 tablespoon cocoa powder
  • ½ cup the ultimate icing sugar replacement by swerve

Instructions

  1. Cream together cream cheese, sweetener, cocoa powder, desiccated coconut and coconut flour.
  2. Add walnuts and mix to combine.
  3. Scoop cookies into 13-14 even balls and press flat with a fork once and then a second time at a 90 degree angle to make a crosshatch pattern.
  4. Chill for at least 30 minutes before eating!
