This keto stir fry is loaded with ground pork, tender kale and crisp broccoli, tossed with sesame seeds, sesame oil and zesty lemon.

This quick and easy pork stir fry is perfect for midweek dinners.

Ingredients

  • 9 ounce ground pork
  • 2 cups broccoli florets
  • 2 cup kale
  • 2 medium – 4 1/8" long scallions
  • 2 teaspoon sesame oil
  • 2 teaspoon lemon juice
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon olive oil
  • 1 clove garlic
  • ½ teaspoon, whole pieces sesame seeds
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Dice the broccoli into bite sized florets and add to a saucepan of boiling water. Simmer for 3-4 minutes until fork tender. Rinse completely and set aside to steam dry.
  2. Heat the olive oil in a skillet over a medium/high heat. Crush the garlic and thinly slice the scallions. Add to the skillet along with the ground pork and cook through until browned all over.
  3. Add the broccoli and stir well to combine, cooking for a minute more.
  4. Add the kale, lemon juice, zest, sesame oil, salt and pepper. Stir well to combine and pan fry until the kale starts to wilt.
  5. Add the sesame seeds and stir through until the kale is wilted and the broccoli is starting to brown. Serve hot.
