These keto lettuce cups are packed with flavor from salty bacon, creamy brie and sweet caramelized balsamic shallots.
These make a great lunch option or individual snacks.
Ingredients
- 4 inner (small) leaf lettuce, romaine or cos
- 4 tablespoon brie cheese
- 2 slice – 6" long bacon
- 2 tablespoon, chopped shallot, raw
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon 100% pure erythritol by now
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 1 teaspoon, chopped thyme, fresh
Instructions
- Thinly slice the shallots and add to a skillet along with the olive oil, balsamic and erythritol. Cook over a low/medium heat for 5-6 minutes or until the shallots are tender and starting to caramelize.
- Add the fresh thyme and season with salt and pepper. Stir to combine and cook for a minute more.
- Set the shallot to one side, keeping warm. Add the bacon to the skillet and cook through until golden.
- Divide the brie evenly between the lettuce cups.
- Tear each strip of bacon in half and place a half over each lettuce cup then top each lettuce cup with the caramelized shallots.
