These hasselback avocados are great for a low-carb snack or a light lunch! There is plenty of room for creativity as well, so you can change up your proteins and cheese if you wish. Simplicity is sometimes the tastiest!

Ingredients

  • 5 ounce avocado
  • 2 slice – each 1 ounce turkey
  • 12 cracker-size slice cheddar cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground

Instructions

  1. Preheat an oven to 350 degrees and line a sheet tray with parchment paper. Prepare a large avocado by slicing it in half and removing the pit and skins. Lay the avocados with the pit sides down. Use a paring knife to slice six slices from each avocado half, leaving them attached at the narrow end, and spread the slices open, as pictured.
  2. Prepare 2 slices of turkey but cutting them into 12 strips (6 strips per slice), and prepare the cheddar cheese if necessary by cutting it into 12 pieces.
  3. Arrange 2 strips of turkey and 1 slice of cheese in each avocado slice, as pictured. Sprinkle the salt and pepper over the avocados. Bake in the oven for 10 minutes and enjoy!
