This mayo free slaw is packed with crunchy cabbage and onion, crispy fried prosciutto and tossed in a lemon mustard dressing.
This makes a great alternative to slaw with mayo, perfect served with chicken or pork.
Ingredients
- 2 slice prosciutto
- 2 tablespoon olive oil
- 1 cup cabbage
- ½ cup red cabbage
- ½ small red onion
- ½ tablespoon lemon juice
- ½ teaspoon mustard
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat half a tablespoon of olive oil in a skillet over a medium heat. Add the prosciutto slices and cook through until crisp and golden. Set aside to cool.
- Very thinly slice the cabbage and onion and add to a large mixing bowl. Toss to combine.
- Add the remaining olive oil, lemon juice and mustard to a small bowl. Season with salt and pepper and whisk together to combine.
- Drizzle the dressing over the slaw and mix well to coat.
- Very thinly slice the prosciutto into strips and add to the slaw before serving. Toss to combine.
