This 5 ingredient Keto recipe will likely go onto your weekly meal planning rotation. It has five ingredients: spicy andouille sausage, green bell peppers, yellow zucchini, celery, and avocado oil. The spicy andouille sausage is sliced and fried in avocado oil until crisped, rendered and browned. The veggies, which are diced small, are sauteed together with the andouille and then everything is seasoned with a little salt. What kind of andouille should I use?

The recipe below lists the brand we recommend. These sausages have a nice garlic flavor so packs a big punch, especially with only 5 ingredients. The extra garlic helps to eliminate the step of adding fresh or powdered garlic to the dish. Feel free to substitute the sausage for any other kind! Also, any of the vegetables can be swapped out as long as they are low-carb vegetables (typically, above the ground vegetables).

If I have extra time what else could I add?

This adds an extra ingredient, but shredded Chihuahua or mozzarella cheese would make an awesome addition to this Keto 5 ingredient meal. Simply add it on top of the finished dish and allow the residual heat to melt it.

Is this dish Paleo?

Yes! Check the ingredients on the type of andouille sausage you are using to make sure that it is grass-fed or free-range.

Ingredients

  • 1 small yellow squash
  • 1 large – 3" diameter x 3 3/4" green bell pepper
  • 8 medium – stalk – 7 1/2" to 8" long celery
  • 4 link cajun style andouille smoked pork sausage by aidells
  • 1 ½ tablespoon avocado oil

Instructions

  1. Dice the yellow squash, green bell pepper and celery stalks into a small dice. Combine all the ingredients together in a large bowl. Set aside.
  2. Slice the andouille sausage into ½” slices and leave on the cutting board while the pan is heating. Heat a large nonstick skillet over medium high heat until hot. Add the avocado oil and swirl the pan to evenly coat it in a thin layer of oil. Add the sausage and cook on the first side for a couple of minutes until it is nicely browned. Then give it a stir and cook the sausage slices on the other side until browned. Feel free to turn down the heat slightly if they are browning too quickly.
  3. Add all the veggies and cook them several minutes without stirring them to allow them to develop color. Then give them a good stir and continue cooking until the veggies are just starting to soften.
  4. Serve immediately! If you would like to serve this dish with cauliflower rice you can. Another great option would be to pair it with an avocado.
