Chicken Strips are a classic, easy lunch that is hard to hate. If you want to feel like a kid again while sticking to your Keto diet, just fry these babies up! Speaking of kids, this is also a great lunch recipe to include your children in! The gluten-free crispy outside is addictive and healthy for anyone to eat!

Ingredients

  • 2 large raw egg
  • 2 teaspoon spicy brown mustard by french's
  • 1 ½ cup, shredded parmesan cheese
  • ¼ cup almond flour
  • 1 teaspoon salt
  • 2 teaspoon black pepper
  • ½ tablespoon paprika
  • 8 tender chicken breast
  • 4 tablespoon grapeseed oil

Instructions

  1. In a bowl, whisk together the eggs and brown mustard with a fork. Set this aside.
  2. In a second bowl, combine the parmesan, almond flour, salt, pepper, and paprika. Set this aside as well.
  3. If you need to, slice chicken breast into tenders. If your tenders are pre-cut, lay them flat and ready for cooking.
  4. *Heat the grapeseed oil in a large skillet on high heat. When the oil is hot, dip each chicken tender into the egg mixture first and then the dry mixture. Place the chicken strips in the skillet for frying. Cook each chicken strip for approximately 5 minutes per side. The tenders will naturally release from the pan when they’re cooked.
  5. Lay the cooked chicken strips on a paper towel to soak up any excess oil.
  6. Enjoy!
