These tasty green beans are par-cooked until tender then sautéed with crispy bacon, zesty lemon, aromatic thyme and garlic.
These make a great side to roasted chicken or pork.
Ingredients
- 3 ½ ounce green beans (string beans), raw
- 2 slice – 6" long bacon
- 2 teaspoon, chopped thyme, fresh
- 1 clove garlic
- 1 teaspoon lemon peel or zest raw
- 1 tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain completely.
- Heat the olive oil in a large skillet over a medium heat. Roughly dice the bacon and add to the skillet until just cooked through.
- Thinly slice the garlic and add to the pan, sweating gently until tender and the bacon is crisp and golden.
- Add the green beans, lemon zest, thyme, salt and pepper. Stir well to combine and sauté for 2 minutes. Serve hot.
