These sweet mocha almonds are coated in cocoa powder, coffee and sweet maple flavored syrup, then baked until golden and slightly caramelized.
These make a great snack between meals or post dinner treat.
Ingredients
- 1 teaspoon instant coffee
- 1 cup almonds, raw
- ½ tablespoon cocoa powder, unsweetened
- ½ tablespoon powdered erythritol
- ½ tablespoon coconut oil
- ½ tablespoon maple flavored syrup by lakanto
Instructions
- Preheat the oven to 275 degrees and line a shallow oven tray with baking paper.
- Add the cocoa powder to a food processor along with the erythritol and coffee. Blend to combine creating a fine powder.
- Add the almonds to a bowl. Melt the coconut oil and add to the bowl along with syrup and powdered flavorings. Stir well, coating the almonds in the seasonings.
- Arrange the almonds in an even layer across a shallow lined oven tray and bake for 20- 25 minutes or until golden and slightly caramelized, turning halfway through. Set aside to cool completely, breaking apart any clumps of caramelized nuts.
