This recipe for crunchy chicken breads chicken thighs in crispy pork rinds and tangy parmesan cheese, before oven baking until golden.
This is a great main served with a side salad, slaw or keto fries.
Ingredients
- 4 medium chicken drumstick, skin removed before eating
- 2 tablespoon, grated parmesan cheese
- 2 teaspoon gourmet collection smoked paprika by mccormick
- 1 ¾ ounce fried pork rinds
- 1 ½ tablespoon mayonnaise
- 1 teaspoon garlic powder
- ⅛ teaspoon black pepper, ground
- ⅛ teaspoon salt, sea salt
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Add the pork rinds to a bowl and crush with a pestle or rolling pin until you have a crumb consistency.
- Add the Parmesan, pepper and garlic powder and stir well to combine.
- In a separate bowl, mix the mayonnaise with the paprika and salt. Set half of this mixture to one side in the fridge.
- Coat the drumsticks liberally in half of the reserved room temperature mayonnaise. Then coat in the parmesan and pork crumb.
- Transfer to the oven for 35 minutes to bake until cooked through, crisp and golden. Served with the refrigerated paprika mayonnaise for dipping.
