This simple baked feta is combined with juicy tomatoes and aromatic scallions and roasted with oil and balsamic vinegar until caramelized.
This is a great side dish to a Mediterranean inspired meal.
Ingredients
- 8 cherry cherry tomato
- 5 ounce feta cheese
- 2 teaspoon, chopped thyme, fresh
- 1 teaspoon lemon peel or zest raw
- ½ tablespoon balsamic vinegar
- ½ tablespoon olive oil
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 4 medium – 4 1/8" long scallions
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Break the feta into bite sized chunks and add to a small oven proof dish. Slice the ends from the scallions and remove any stringy outer leaves. Arrange in the oven dish along with the tomatoes.
- Scatter over the lemon zest, fresh thyme, salt and pepper.
- Drizzle over the olive oil and vinegar, coating the vegetables and cheese.
- Transfer to the oven to bake for 18-20 minutes or until the vegetables are tender.
