Simple caesar salad has been elevated to a more filling and vibrant dish! A juicy, lightly seasoned chicken thigh adds bulk and a little fat to this meal. A mix of bright and crunchy cucumber and red onion compliments your chicken. All that is left to add is your favorite caesar dressing!

Ingredients

  • 4 ounce chicken thigh
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon italian seasoning
  • 2 teaspoon olive oil
  • 2 ½ ounce cucumber
  • ½ ounce red onion
  • 2 tablespoon caesar dressing
  • 1 ½ ounce romaine lettuce
  • ¼ ounce parmesan cheese

Instructions

  1. Season one side of a small chicken thigh with salt, pepper, and italian seasoning. Cook the chicken in olive oil in a small pan over medium high heat. Cook the chicken for 4-5 minutes per side, until golden brown. Set the chicken aside to cool when done.
  2. In a small mixing bowl, combine diced cucumber, diced red onion, and caesar dressing.
  3. To arrange your salad, rip or cut up the romaine lettuce. Top the lettuce with the cucumber dressing mix. Then, slice and arrange the chicken on top. Follow this with shaved or shredded parmesan cheese. Enjoy warm or cold!
