This salmon dish is so easy yet super tasty. Simply roasted salmon and green beans are seasoned with our keto crispy capers and just a hint of zing from preserved lemon accompanied by crème fraiche infused with aromatic dill.
This is a great meal if you are after an easy to prepare mid-week treat! Perfect served alongside a simple green salad or a portion of cauliflower rice. The recipe for the keto crispy capers can be found in the sides section.
Ingredients
- 4 medium salmon steak (5/8 in. thick) salmon
- 10 ounce green beans
- 6 ounce creme fraiche by yoplait
- 2 teaspoon lemon juice raw
- 1 lemon preserved lemons by simon johnson
- 2 servings keto crispy fried capers
- 2 tablespoon olive oil
- 1 tablespoon dill
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 395 degrees Fahrenheit and line a shallow oven tray with baking paper.
- Arrange the salmon fillets across the baking tray along with the green beans.
- Season with the salt and pepper and drizzle with the olive oil. Use your hands to rub the oil and seasoning all over the salmon and beans.
- Finely slice one small preserved lemon and scatter over the salmon and beans.
- Transfer the salmon to the oven to bake for 15 minutes or until cooked through and opaque.
- Whilst the salmon is cooking, you can prepare the dressing by simply adding the crème fraiche to a mixing bowl with the lemon juice and the dill, stir well to combine and refrigerate until ready to serve.
- Once the salmon is cooked to taste, crumble over the crispy capers and serve with a generous dollop of crème fraiche.
