These mildly spiced and aromatic ground beef cups have all the flavor of a classic shawarma and are topped with a creamy tahini dressing.
2 lettuce cups make for a deliciously filling lunch or you could have one cup as a snack between meals.
Ingredients
- ½ pound ground beef
- 2 clove garlic
- ½ teaspoon cumin, ground
- ½ teaspoon coriander leaf, dried
- ½ teaspoon paprika
- ½ teaspoon ginger, ground
- ¼ teaspoon turmeric, ground
- ¼ teaspoon cinnamon
- ⅛ teaspoon cloves, ground
- 1 wedge – 1/8 of 2" diameter lime
- 1 tablespoon, chopped cilantro
- ½ tablespoon tahini
- 4 outer (large) leaf romaine lettuce
- 1 tablespoon water
- 1 tablespoon olive oil
- ½ cup beef broth, bouillon or consomme, homemade
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat the olive oil in a large pan over a medium heat. Add the beef to the pan and fry until browned all over.
- Mince the garlic and add to the pan along with all the herbs and spices.
- Add the beef stock to the mince and simmer for 15 minutes or until all the liquid has been absorbed.
- To prepare the tahini dressing, add the tahini to a small mixing bowl along with one minced garlic clove, the juice and zest of the lime and the water. Mix well to combine.
- Divide the cooked mince between 4 lettuce leaves.
- To serve drizzle over the tahini dressing and scatter over fresh cilantro to serve.
