This simple roasted chicken is smothered in a spiced tahini sauce to create a flavorsome and succulent chicken.
Perfect served with cauliflower cous cous or roasted vegetables.
Ingredients
- 2 ¾ pound chicken, whole, skin eaten
- 2 clove garlic
- 2 tablespoon tahini
- 2 teaspoon lemon juice
- 2 teaspoon cumin, ground
- 1 teaspoon spices coriander seed or ground
- ½ tablespoon olive oil
- ½ tablespoon maple flavored syrup by lakanto
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Mince the garlic and add to a mixing bowl with the tahini, lemon juice, cumin, coriander, olive oil, syrup, salt and pepper. Mix well to combine.
- Liberally coat the chicken in the tahini mixture.
- Transfer to the oven to roast for 1 hour 30 or until completely cooked through and the juices run clear.
