For an easy lunch, this cod recipe can be whipped together in 20 minutes! The fish is lightly seasoned and is complemented with a buttery sauce that has cooked with fresh lemon, garlic, and dill. This recipe is so low-carb, you can pair it with just about any Carb Manager side!

*Please note you will need 2 slices of fresh lemon for this recipe. It is not included in the ingredient list since it will not be consumed.

Ingredients

  • 6 oz raw atlantic cod
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon olive oil
  • ½ tablespoon butter
  • 1 clove garlic
  • 1 teaspoon, whole pieces dill weed, fresh

Instructions

  1. Prepare the cod by laying it down on a flat surface. If the filet is long, slice it across in half for an easier cooking process. Sprinkle HALF the salt, pepper, and onion powder over the exposed tops.
  2. Heat the olive oil in a medium sized skillet over high heat. Place the fish seasoned side down in the oil. Sprinkle the remaining seasonings over the bare exposed fish.
  3. Cook the fish for 4-5 minutes per side, depending on the thickness of the fish. You want both sides to have a crisp, golden brown exterior.
  4. Once done, set the cooked fish aside to rest. Meanwhile, wipe the skillet clean and melt the butter in it over low heat. Mince and toss in the garlic clove and 1-2 slices of lemon. Let the butter cook with the ingredients for about 30 seconds to become fragrant.
  5. Finally, return the fish to the butter sauce and sprinkle in the fresh dill. Place a lid over the skillet and let the fish and sauce marry together for 1-2 minutes over the heat.
