This simple keto salad is loaded with low carb veggies, aromatic herbs, protein rich eggs and a creamy lemon mayo dressing.
This is a great lunch or light dinner option.
Ingredients
- 2 cup arugula
- 2 medium hard boiled egg
- 1 ½ tablespoon mayonnaise, store bought
- 1 cup cauliflower rice
- ½ cup cucumber, raw, without peel
- ½ small yellow bell peppers, raw
- ½ small red bell peppers, raw
- ½ tablespoon lemon juice
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the cauliflower rice to a small pan over a low/medium heat. Add two tablespoons of water and bring to a simmer, cooking gently for 3-4 minutes until the cauliflower is tender and the water has been absorbed.
- Finely dice the bell peppers and cucumber and add to a large serving bowl along with the cauliflower rice and arugula. Season to taste and toss to combine.
- Slice the hard boiled eggs and arrange in amongst the salad.
- Mix together the lemon juice and mayonnaise until smooth.
- Drizzle the lemon mayo over the salad to serve.
