These simple vegetarian lettuce cups are packed with low carb veggies and coated in a spicy chili mayo.

Ingredients

  • 6 small radish
  • 4 inner (small) leaf romaine lettuce
  • 1 servings keto chili mayo
  • 1 medium – 4 1/8" long scallions
  • ¼ cup cucumber
  • ¼ cup red cabbage
  • ¼ each avocado

Instructions

  1. Thinly slice the radishes, scallion and cabbage and finely dice the cucumber and avocado. Add to a mixing bowl.
  2. Add the chili mayo and stir well to coat the vegetables.
  3. Divide the slaw evenly between the lettuce cups to serve.
