This whole roasted cauliflower is basted in a spiced garlic butter then oven baked until golden and tender.
This cauliflower makes a great side to your Sunday roast or served with steaks.
Ingredients
- 1 teaspoon lemon juice
- 1 medium – head – 5" to 6" diameter cauliflower, raw
- 1 tablespoon unsalted butter
- 1 clove garlic
- 1 teaspoon lemon peel or zest raw
- 1 teaspoon hot chili pepper, dried, with seeds
- ¼ teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Bring the butter to room temperature and add to a small mixing bowl. Crush the garlic into the bowl and add the lemon juice, zest and chili flakes. Mash together to combine.
- Smother the butter all over the cauliflower then season with salt and pepper.
- Wrap the cauliflower in foil and transfer to the oven to bake for 25 minutes.
- Remove the foil and continue to bake for a further 10 minutes until tender all the way through and golden brown on top.
