Ingredients
- 5 medium slice (yield after cooking) bacon
- 3 ounce kale
- ¼ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Lay the strips of bacon down in a wide pot (a pot will be best for holding the kale later) on high heat. Cook the bacon through until very crispy. Then, set aside to cool.
- Leave the bacon grease in the pot and turn the heat down to a medium-low. Chop your kale if it’s not chopped already, and place it in the pot. Cook the kale down until it’s very wilted and retaining crispy edges – about 5 minutes. Season with salt and pepper.
- Chop the cooled bacon into bits and stir it into the crispy kale. Serve warm with your main dish.
