This Mediterranean inspired sausage bake is packed with flavor from aromatic herbs to sweet balsamic vinegar and smokey paprika.

The entire recipe is cooked and prepared in one dish making this a fuss free weeknight dinner.

Ingredients

  • 4 medium link – breakfast size sausage, pork, fresh
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
  • ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
  • ½ small red onion
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon, chopped thyme, fresh
  • 1 ½ 1 teaspoon oregano fresh
  • 2 1 x sprig rosemary
  • 1 teaspoon gourmet collection smoked paprika by mccormick
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 375 F.
  2. Finely slice the peppers and quarter the onion and add to a shallow baking dish. Add the thyme, oregano and rosemary and drizzle with the balsamic vinegar and olive oil, then season with salt and pepper. Toss to combine.
  3. Nestle the sausages in between the herbs, vegetables and smoked paprika.
  4. Transfer to the oven to bake for 25-30 minutes until the vegetables are tender and the sausages are completely cooked through.
