This keto side is loaded with low carb veggies, crispy bacon and baked in a sweet maple and oil dressing.

This is a great sharing side to accompany chicken or pork.

Ingredients

  • 4 slice – 6" long bacon
  • 3 ½ ounce green beans
  • 2 cup red cabbage
  • 1 ½ tablespoon olive oil
  • ½ tablespoon maple flavored syrup by lakanto
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Dice the cabbage into 2 inch chunks and slice each bacon strip into quarters. Arrange the cabbage and green beans across a sheet pan and scatter over the bacon pieces.
  3. Mix together the oil and the syrup.
  4. Drizzle the oil mixture over the vegetables and bacon and then season to taste.
  5. Transfer to the oven to roast for 20-22 minutes until the bacon is crisp and the vegetables are tender and slightly caramelized at the edges.
