These simple jumbo shrimp skewers make for a quick and easy lunch option served with cauliflower rice or a side salad.

Feel free to adjust the spices if you like a little more heat!

Ingredients

  • 16 shrimp jumbo shrimp by publix
  • 1 teaspoon allspice, ground
  • 1 tablespoon olive oil
  • 1 teaspoon thyme, dried
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger, ground
  • ¼ each – approx 4" – 6" long hot chili peppers, red, raw
  • ¼ teaspoon cayenne
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and cover four wooden skewers with water to soak for 20 minutes.
  2. Add the shrimp to a mixing bowl with all the dried herbs, spices, salt and pepper. Finely chop the chili and add to the bowl along with the olive oil. Mix everything well to combine, coating the shrimp in the seasonings. Cover and refrigerate until the skewers are ready.
  3. Thread four shrimp onto each of the wooden skewers. Arrange the shrimp across a shallow baking tray and bake for 6-8 minutes or until hot through.
