This quick and easy turkey stir fry is packed with tender shredded sprouts, sweet onion, aromatic sage and tart dried cranberries.
This makes a great weeknight dinner served on a bed of cauliflower rice.
Ingredients
- 1 ½ cup, whole pieces brussels sprouts
- 1 ounce ground turkey
- 1 clove garlic
- 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
- 1 teaspoon sage, dried
- 1 tablespoon olive oil
- 1 tablespoon, chopped red onion
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Thinly slice the onion and crush the garlic. Heat the oil in a skillet over a low/medium heat. Add the onion and garlic and sweat gently until soft.
- Thinly slice the sprouts and add to the skillet along with the ground turkey, sage, salt and pepper. Stir well to combine and pan fry over a medium/high heat until the turkey is cooked through and the sprouts tender and golden. You can add a little stock or water whilst cooking if the pan gets too dry.
- Stir through the dried cranberries to serve.
