Ingredients

  • 8 ounce ground chuck 80% lean 20% fat by kroger
  • 8 ounce ground sirloin by publix
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon onion powder
  • 1 teaspoon mustard powder
  • ½ teaspoon paprika
  • 2 teaspoon italian seasoning
  • 1 large raw egg
  • 1 tablespoon almond flour
  • 6 tablespoon, shredded mozzarella cheese
  • 4 teaspoon olive oil

Instructions

  1. Preheat an oven to 400 degrees and spray an oven-safe baking dish with pan spray. In a bowl, use your hands or a spoon to combine the chuck, sirloin, salt, pepper, onion powder, mustard powder, paprika, italian seasoning, egg, and the almond flour.
  2. Divide the mixture into four equal parts. Shape each piece into a ball, and press down the centers to form a crevice for the cheese.
  3. Spoon 1 ½ TB of the shredded mozzarella into each meatball.
  4. Form the meat back over the cheese, and reshape the meatballs. Place them in your baking dish. Drizzle a teaspoon of olive oil over the top of each meatball.
  5. Bake the meatballs, uncovered, for 40 minutes or until the meatballs are completely cooked through and the tops have browned and crusted slightly.
  6. Enjoy!
