A protein packed side dish is a great way to keep your protein intake at that 20% recommended mark for keto diets, leaving you opportunity to make your main course focused on fats and low-carb vegetables. Just like leftovers, this dish is best served cold!
Ingredients
- 2 slice – 6" long bacon
- 5 oz chicken breast boneless skinless raw
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper, ground
- ⅛ teaspoon onion powder
- ¼ teaspoon oregano, dried
- 1 teaspoon olive oil
- 6 ounce broccoli frozen unprepared
- ¼ teaspoon lemon pepper seasoning
- ¼ teaspoon italian seasoning
- ⅛ teaspoon crushed red pepper by simply organic
- 1 teaspoon garlic, fresh
- ½ teaspoon white wine vinegar by alessi
- 1 tablespoon olive oil
Instructions
- Cook you bacon in a pan until both sides are crispy. Let the bacon cool before chopping into pieces. Set this aside for later.
- Next, chop the chicken into small, bite sized pieces. Toss the chicken in a pan with salt, pepper, onion powder, oregano, and olive oil over high heat. Cook the chicken until the pieces are cooked through and the outside edges all have a char – about 7-8 minutes. Allow the cooked chicken to cool enough to combine in a bowl with your chopped bacon and set aside in the refrigerator to cool entirely through.
- Chop THAWED frozen broccoli into small pieces. Stir together in a bowl with all the remaining ingredients. Set the bowl in your refrigerator to marinate for 1 hour along with the chicken.
- To serve, stir the cold chicken and bacon together with the marinated broccoli salad.
