The salmon is oven baked together with the green beans in a foil parcel, allowing the fish and vegetables to steam in the seasonings and butter.

A quick and easy mid-week meal, this salmon dish is perfect served alongside a simple green salad.

Ingredients

  • 10 ½ ounce green beans (string beans), raw
  • 1 tablespoon unsalted butter
  • 1 tablespoon dill weed, fresh
  • ½ teaspoon mustard
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 16 ounce salmon

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and cover a shallow oven tray in a sheet of foil.
  2. Melt the butter in a microwave or over the stove, then add to a small mixing bowl. Whisk in the mustard and dill to combine.
  3. Arrange the green beans on the foil lined tray and nestle the salmon fillets in between. Season with the salt and pepper.
  4. Drizzle the melted butter mixture over the fish and vegetables.
  5. Lay another sheet of foil on top of the salmon and beans and fold the edges over, creating a loose parcel.
  6. Transfer to the oven to bake for 15-18 minutes until the vegetables are tender and the salmon is cooked through and flakes easily with a fork.
