The salmon is oven baked together with the green beans in a foil parcel, allowing the fish and vegetables to steam in the seasonings and butter.
A quick and easy mid-week meal, this salmon dish is perfect served alongside a simple green salad.
Ingredients
- 10 ½ ounce green beans (string beans), raw
- 1 tablespoon unsalted butter
- 1 tablespoon dill weed, fresh
- ½ teaspoon mustard
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
- 16 ounce salmon
Instructions
- Preheat the oven to 400 degrees Fahrenheit and cover a shallow oven tray in a sheet of foil.
- Melt the butter in a microwave or over the stove, then add to a small mixing bowl. Whisk in the mustard and dill to combine.
- Arrange the green beans on the foil lined tray and nestle the salmon fillets in between. Season with the salt and pepper.
- Drizzle the melted butter mixture over the fish and vegetables.
- Lay another sheet of foil on top of the salmon and beans and fold the edges over, creating a loose parcel.
- Transfer to the oven to bake for 15-18 minutes until the vegetables are tender and the salmon is cooked through and flakes easily with a fork.
