Banana bread is one of the greatest comfort foods, but this version is even better because it is keto!
Ingredients
- 1 cup almond flour
- 2 teaspoon baking powder
- ¼ teaspoon salt, sea salt
- 3 tablespoon whole ground flaxseed meal by bob's red mill
- ¾ cup the ultimate icing sugar replacement by swerve
- 6 large raw egg
- 1 1 tsp banana extract
- ½ teaspoon vanilla extract
- 1 ½ tablespoon olive oil
Instructions
- Preheat an oven to 350 F. Spray loaf pan with nonstick cooking spray. Combine the almond flour, baking powder, sea salt, ground flax seeds and confectioner’s sugar together in a food processor. Pulse until smooth.
- Add in the eggs, extracts and olive oil. Pulse until smooth.
- Pour into prepared loaf pan and bake for 50-55 minutes until the center of the loaf is cooked through.
- Allow to cool for 20 minutes before running a knife around the edges of the loaf and unmolding the loaf.
- Slice into 16 slices.
