This simple yet flavorsome recipe uses griddled sliced zucchini as a base for delicious sandwich style toppings. The zucchini is layered with peppery arugula, tangy goats cheese, crunchy pine nuts and a sweet balsamic dressing.

This makes a great lunch option for one or a snack for two.

Ingredients

  • 1 ½ ounce goat cheese, soft
  • 1 tablespoon olive oil
  • 1 teaspoon maple flavored syrup by lakanto
  • ¾ tablespoon, whole pieces pine nuts
  • ½ medium zucchini
  • ½ tablespoon balsamic vinegar
  • ¼ cup arugula
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Remove the tips of the zucchini and slice lengthways so that you have two strips roughly 1/4 inch thick. Season the zucchini with a little salt and pepper and drizzle with half a tablespoon of olive oil. Rub the oil and seasoning into the zucchini on both sides.
  2. Heat a griddle pan to high. Place the zucchini strips in the pan and cook for two minutes or so on each side or until tender and char lines are visible.
  3. Whilst the zucchini is cooking, add the pine nuts to a dry pan over a low heat. Toast gently until lightly golden.
  4. Divide the arugula between the two zucchini.
  5. Crumble over the goats cheese.
  6. Scatter the toasted pine nuts over the cheese. Season the sandwich with a little salt and pepper.
  7. Whisk together the remaining olive oil, balsamic and syrup.
  8. Drizzle the balsamic dressing over the open sandwich to serve.
