This keto braised celery is simmered in stock with aromatic shallot and garlic until tender.

This makes a great side to roasted chicken or pork, served with the pan juices.

Ingredients

  • 6 medium – stalk – 7 1/2" to 8" long celery stalks
  • 1 tablespoon unsalted butter
  • 1 clove garlic
  • 1 tablespoon, chopped shallot, raw
  • ½ cup vegetable broth, bouillon or consomme

Instructions

  1. Melt the butter in a saucepan over a low/medium heat. Thinly slice the shallot and garlic and add to the pan, sweating gently until tender.
  2. Dice the celery stalks into thirds and add to the pan. Continue to cook for a further 2-3 minutes to just soften and brown the celery.
  3. Add the vegetable stock and bring to a gentle boil. Reduce to a low simmer, cover and cook for 10 minutes. Uncover and cook for a few minutes more. Serve hot with the buttery stock.
