This simple yet tasty feta salad is packed with flavor from aromatic herbs, sweet peppers and salty olives.
This makes a great starter or side salad served with grilled chicken.
Ingredients
- 6 olives pitted kalamata olives by mezzetta
- 1 cup zucchini noodles by green giant
- 1 tablespoon peppermint, fresh
- 1 tablespoon, chopped parsley
- 1 tablespoon, whole pieces pine nuts
- 1 tablespoon olive oil
- ⅓ cup feta cheese
- ⅓ cup roasted red peppers in brine by kroger
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the zucchini noodles to a mixing bowl.
- Roughly chop the olives, mint, parsley and peppers. Add to the bowl with the noodles and crumble in the feta.
- Season with pepper and drizzle over the olive oil. Divide between two serving bowls and scatter with pine nuts to serve.
