This super easy meatball recipe can fulfill so many meals! Eat a couple as a snack, include 2-4 in your meal prep lunches, enjoy on top of a salad, or use them in your keto tortillas for taco night! Bake the meatballs over the weekend and use them throughout your week!
Ingredients
- 1 pound hamburger or ground beef, 85% lean
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ¼ teaspoon cumin, ground
- ⅛ teaspoon coriander seed ground or whole dried
- ⅛ teaspoon onion powder
- ¼ teaspoon paprika
- ½ cup, shredded pepper jack cheese
Instructions
- Preheat an oven to 375 degrees. Mix all ingredients in a bowl so you have an evenly spiced meat mixture.
- Form the meat into 1 ½-inch meatballs and place them on a sheet tray lined with aluminum foil or parchment paper. The original recipe here makes about 22 meatballs.
- Bake the tray for 25 minutes – no rotating necessary!
