These little meatballs are packed with flavor! They are a staple in my weekly meal prep. Simply mix the ground meat with a few other ingredients, then bake and broil! Serve these with pickled veggies, cucumber salad, or cauliflower rice. They are delicious topped with some sriracha!

Ingredients
- 1 pound ground pork
- 1 tablespoon soy sauce made from tamari
- 1 teaspoon ginger
- 2 clove garlic raw
- 3 tablespoon green onions
- ¼ cup cilantro
- ½ teaspoon 100% pure erythritol by now
- ¼ teaspoon salt
- ½ teaspoon rice wine vinegar by obento
- 1 teaspoon organic coconut flour by let's do organic
Instructions
- Preheat the oven to 400 degrees fahrenheit. Mince the cilantro and green onion and add to a bowl. Use a microplane or grater to grate the garlic and ginger.
- Add the ground pork, soy sauce, erythritol, salt, rice wine vinegar and coconut flour to the bowl and mix.
- Form golf ball-sized meatballs and place them on a parchment covered tray. Bake at 400 degrees for 20 minutes.
- Turn on the broiler and broil them at 490 degrees for 30 seconds to 1 minute, or until the tops of the meatballs brown. Enjoy!
