This tangy avo-lime mayo is simple to throw together yet brings a whole new flavour to your classic mayonnaise.
Perfect as a salad dressing, for egg salads, fajita topping or simply for dipping low carb veggies in to!
The recipe requires a keto friendly store bought mayo, but you can replace this with your own homemade mayo if you prefer.
Ingredients
- 1 tablespoon cilantro
- ½ cup mayonnaise
- ½ avocado, California (black skin) avocado
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- ¼ fruit (2 in. dia) lime
Instructions
- Peel and de-stone the avocado and add to a food processor along with the mayonnaise. Season to taste and blend until smooth.
- Pick the cilantro leaves and add them to the food processor along with 2 teaspoons of the lime juice and a teaspoon of the lime zest.
- Pulse to combine until the dressing is smooth and creamy.
- Refrigerate for 10 minutes before serving.
